We exclusively use a white mountain broiler chicken on our farm. The white broilers are a quiet and calm breed that are excellent foragers. After years of raising and testing multiple breeds, we found the white mountain broiler to be the best on pasture and produced a nice, tender, and consistent flavor. We hand load our chickens for processing and give them one final full chicken body massage before transport.
